This rich and flavourful Sticky Rooibos Bread recipe puts a delicious twist on a classic treat.
With soft, fluffy dough and a sweet, fragrant rooibos syrup that brings a unique, earthy flavour that perfectly complements the golden, pillowy dough.
Ingredients for the dough
- 5 cups Lifestyle Food Gluten Free Self-Raising Flour
- 2 cups lukewarm water
- 11g instant yeast
- 2 tsp sugar
- Pinch of salt
Ingredients for the rooibos syrup
- 1¼ cups brewed Lifestyle Food Rooibos Tea
- 1 cup sugar
- ⅓ cup golden syrup
- 100g cubed butter

Method
- Preheat your oven to 190°C. Spray a cake tin or baking dish with non-stick spray or grease it with butter.
- In a large bowl, combine the flour, sugar, and salt. Dissolve the yeast in the lukewarm water and let it bubble for a few minutes. Then pour the yeast mixture into the flour mixture and stir until combined. Let the dough rise in a warm spot for about 30 minutes.
- While the dough is rising, brew the rooibos tea. In a small saucepan, combine the tea with sugar, golden syrup, and butter. Simmer on low heat until the syrup thickens and becomes sticky.
- Once the dough has risen, knead it on a lightly floured surface. Slice off pieces of dough and roll them into small balls.
- Place the dough balls into the prepared baking dish, stacking them neatly. Pour the sticky rooibos syrup over the dough balls, ensuring they’re all coated. Bake for about 25-30 minutes, or until the top is golden and the bread is cooked through.
- Once baked, add the cubed butter on top of the bread while it’s still warm. Allow it to melt, making the bread extra delicious.
