This scrumptious Protein Banana Bread recipe combines carbs from bananas with slow-release protein from Biogen Night Feed Casein Protein powder to support your recovery the tasty way.

Ingredients

  • 3 overripe bananas
  • 1 heaped scoop of Biogen Night Feed Casein Protein, Vanilla Custard flavour
  • 1¾ cups of self-rising flour (you can substitute half with oat or wholewheat flour)
  • ½ cup of brown sugar
  • 1 cup of milk
  • 1 tbsp of apple cider vinegar
  • 1 tsp of vanilla extract
  • ½ tsp of ground cinnamon
  • 1½ tsp of baking powder
  • ½ tsp of baking soda
  • Pinch of salt
  • Chopped brown dates to top

Instructions

  1. Preheat your oven to 180°C.
  2. Mash the ripe bananas in a mixing bowl. Add the brown sugar, milk, oil, apple cider vinegar, and vanilla extract.
  3. Sift in the self-rising flour, along with the casein protein powder. Mix until all ingredients are well combined and you have a smooth batter.
  4. Line a bread tin with parchment paper and pour the batter into it. Sprinkle the chopped brown dates over the top.
  5. Place the tin in the preheated oven and bake for 35-40 minutes, or until the top is a lovely golden brown and a toothpick inserted into the centre comes out clean.
  6. Once baked, remove the banana bread from the oven and allow it to cool in the tin to room temperature.
  7. Once cooled, carefully remove the banana bread from the tin, slice it up, and serve.
