Method

  1. Preheat your oven to 180°C and grease a square cake tin. Line the tin with baking parchment for easy removal.
  2. In a pan, melt the butter, sugar, peanut butter, coconut cream (or yoghurt), and vanilla extract over low heat, stirring until smooth. Remove from the heat once everything is melted and well combined.
  3. Sift together the flour, corn starch, baking powder, bicarbonate of soda, and salt. Gradually add this mixture to the wet ingredients, stirring until the batter is thick and smooth.
  4. Scrape the batter into the prepared cake tin and spread it out evenly.
  5. Add dollops of strawberry jam on top of the batter. Use a knife or skewer to gently swirl the jam into the batter for a marbled effect.
  6. Bake the blondies in the preheated oven for about 25 minutes, or until a skewer inserted into the centre comes out clean.
  7. Allow the blondies to cool completely in the pan before slicing into squares.
