This delicious Mini Blueberry Protein No-Bake Cheesecakes recipe is perfect as a high-protein dessert or snack for the week.

Ingredients for the crust

  • 100g granola (i used digestive biscuits)
  • 20g melted butterIngredients for the filling
  • 150g cottage cheese
  • 70g Greek yoghurt
  • 80g blueberries

Instructions

  1. Crush or blend cookies into a fine crumb. Add to a bowl along with melted butter and mix until combined.
  2. Divide into 6 muffin papers and press into the bottom.
  3. Add cottage or cream cheese, yoghurt, blueberries, and protein powder to a blender and blend until smooth.
  4. Divide onto your cheesecake crusts and too with a couple of blueberries.
  5. Freeze for 2-3 hours or until solid then remove the paper cases and store in the fridge.
